awesome apple streusel cake

cake2I can never get enough of apples.  I love apple pie, apples on their own, apple juice, apple muffins, apple crumble. Granny smith, pink lady, red delicious yum yum yum!

A colleague of mine was celebrating a birthday this week and I didn’t want make the usual chocolate mud cake or vanilla pound cake iced within an inch of its life, so I turned to the humble apple.

The awesome apple streusel cake is fancier than a standard apple teacake with a fantastic streusel topping that melts in your mouth! Cinnamon, butter and sugar; really what could taste better!

Awesome apple streusel cake

115g butter

3 large granny smith apples

1 1/3 cups self-raising flour

½ cup brown sugar 

1 tsp cinnamon

2 eggs

2 tbsp milk 

1 tblsp extra butter (15g)

extra brown sugar (1/4 cup)

 

streusel topping 

¾ cups flour

5 tbsp butter

½ cup brown sugar 

1 tspn cinnamon

1. Grease a 23cm round springform cake tin and line with baking paper. Pre-heat oven at 160 degrees (fan forced).

2. Make streusel topping by processing all the ingredients until the mixture looks like breadcrumbs.  Wrap mixture in cling wrap and place in the freezer. streusel

3. Peel and core 3 apples and slice thinly – place to one side apple

4. Sift flour and cinnamon into a bowl.  In a second bowl beat butter and sugar until light and fluffy, gradually add eggs then flour mixture.  Gently fold and add milk.

5. Pour batter into lined tin and place in oven for 25 minutes.

6. Take apples and lightly cook in a fry pan with a sprinkle of brown sugar and a tablespoon of butter until sugar caramelises.photo1

7. Remove cake from oven and top with apple mixture. Take streusel from freezer and grate over apples and place back in the oven for 20 – 25 minutes.

photo8. Once firm to touch, cool in the tin before opening tin and dust the cake with icing sugar.

9. Feast on the apple and cinnamon delight!
